What is Cachupa?

Cape Verde’s national dish cachupa is a rich stew made of hominy, beans, seasoned meats, and vegetables. many individuals have their unique way of preparing this dish, given the many ways it is eaten on the islands.

it is rich in carbs with beans in brothy sauce, which can be enriched by adding meat. The history of its homeland is contained inside this dish. Considered the national dish of Cape Verde, it is served on all ten islands in the archipelago, each with its regional variation. It is a dish cooked by both men and women and a traditional Saturday meal in numerous households and restaurants.

Cachupa has been influenced by history very much in a way that the ingredients for this dish such as, meat and vegetables, were brought by different influences. On the one hand, the Europeans brought livestock with them when they came to Cape Verde. and the vegetables are a tradition that comes from West Africa. There is also South American influence in this dish, because sometimes it includes corn, hot chili, peppers, and cassava.

cachupa can also be enjoyed reheated. Some people enjoy this reheated version of cachupa refogado the next day with a fried egg.
